Inspired by that, I began crafting a coffee that would showcase bright acidity front and center, while also addressing what I personally felt was often lacking in such coffees — depth and a lasting finish.

To be honest, I’ve always been a dark roast guy. I’d only dabbled in light roasts out of curiosity.
But the more I drank, the more I came to appreciate their charm — and it felt like the world of coffee suddenly expanded in front of me.
What especially resonated with me was the third-wave movement’s respect for producers and emphasis on storytelling.

That said, my roasting setup is far from ideal for replicating third-wave styles.
I roast using a direct-fire roaster, in an environment where outside temperature can easily affect the roast profile.
Trying to perfectly replicate specialty coffee roast curves every time just isn’t realistic.
That limitation taught me something important: copying trends won’t lead to great coffee.
Instead, I asked myself what I could offer — something that fits my tools, my style, and my perspective.
That led me to embrace blending as the most effective and expressive method, particularly well-suited to direct-fire roasting.

At first, I tried creating a light roast blend — but the strong personalities of the beans clashed, resulting in a chaotic, unbalanced cup.
By settling on a medium roast, I was able to tame the acidity just enough to allow the blend’s depth and finish to come through, without losing its fruity punch.

The final result?
A cup with assertive, lively acidity and a lingering finish that subtly rises into your nose — a unique flavor profile you won’t easily find elsewhere.
Naturally, it’s not for everyone.
The friend who made the original request loved it, saying it was “exactly what I wanted!”
But I’ve also had people tell me, “Way too sour — I couldn’t drink it!” (Fair enough. 😅)
