Kenya AA – Aging (Day 2)

Only two days into aging, and just look at that glossy coffee oil (shameless self-praise, lol).
Looks like I hit the roast level I was aiming for, and I’m pretty satisfied with the result.
I’ll keep tasting and testing it until around day 10, but personally, I’m starting to think freshly roasted coffee might not be so bad after all.

At first sip, there’s a noticeable bitterness, followed by a hint of sweetness and acidity.
The overall mouthfeel is clean, maybe even a bit on the light side.
That said, the aftertaste lingers longer than you might expect… or at least that’s how it feels to me (just my two cents).
